This Mango Coconut Chia Pudding is tropical, creamy, and refreshing—basically sunshine in a jar! ☀️

Day 64 of Healthy Easy Recipes, and this one is made with coconut milk, layered with mango puree, and topped with fresh fruit for the perfect make-ahead snack or breakfast.

Directions:

  • Add the chia seeds, shredded coconut, maple syrup, vanilla extract and coconut milk to a mixing bowl and whisk together.

  • Place the bowl in the fridge overnight to set, or for at least 2 hours.

  • Peel and cut up the mango and puree it in a blender.

  • Layer the chia pudding and mango puree in a cup or jar.
