Cookie Dough Chia Pudding 🍪✨

It’s cookie dough… but make it chia pudding! 😍 Day 58 of Healthy Easy Recipes, and this one is creamy, protein-packed, and studded with dark chocolate chunks. It tastes like dessert but is perfect for breakfast or a snack!

Directions:

  • Blend together:

    • 3/4 cup almond milk

    • 1/2 cup cottage cheese

    • 2 tbsp cashew butter

    • 1 tsp vanilla extract

    • 1/2 tsp almond extract

    • 1–2 tbsp maple syrup (to taste)

  • Pour the blended mixture into a bowl with:

    • 1/4 cup chia seeds

    • 1/4 cup chopped dark chocolate or chocolate chips

  • Stir until slightly thickened, then refrigerate for at least 4 hours or overnight.
