Smashed Gnocchi Caesar Salad
We know everyone’s heard of smashed potato salad but have you ever tried smashed potato gnocchi salad??!! Omgggg this is the best thing we never knew we needed and it’s so perfect for barbecue season. It’s everything you love about Caesar salad but it’s served atop a crispy cheese base that’s got the gnocchi baked right in. It’s seriously delicious and so much more fun than your average Caesar salad. Make it this weekend for your Memorial Day barbecue everyone will love it.
1 lb gnocchi cooked
10 oz Parmesan or Italian cheese blend
Olive oil
Salt and pepper

Caesar Salad dressing
2 tablespoons olive oil
2-3 inches anchovy paste
1 garlic clove minced
1 teaspoon Dijon
1 teaspoon Worcestershire
1/2 teaspoon hot sauce
1 c mayonnaise
1 lemon juiced
Chopped romaine lettuce
2-3 tablespoons Parmesan
Add all ingredients to a bowl and whisk together.

Directions:

  • Spread the cheese on a parchment lined baking sheet and top with the cooked gnocchi.

  • Spray with olive oil and smash the gnocchi with the bottom of a glass or something flat.

  • Spray again and sprinkle with salt and pepper.

  • Bake at 400 for about 15-20 minutes until cheese is browned and bubbling.

  • Let cool and top with chopped romaine drizzled with Caesar dressing.
