BLACK BEAN MANGO SALAD with AVOCADO!🥑.
QUICK & EASY + PACKED WITH PROTEIN!🙌🏻 This salad is always a favorite! It’s made with summertime classics like black beans, mango, sweet corn & avocado all simply seasoned & tossed in lime juice to coat. Perfect for meal prep & loaded with flavor!🤗

What you’ll need:
Canned black beans, drained & rinsed
Fresh mango
Red bell pepper
Corn
Red onion
Cilantro
Chili powder
Lime juice
Salt, to taste
Black pepper, to taste

Directions:

  • 1. Prepare the corn. Bring a large pot of water to a boil and shuck the corn (remove the husks and silk). Once boiling, add your corn cobs to the pot and let them boil for 1½-2 minutes. Then remove the corn from the pot and discard the water. Allow the corn to cool completely before cutting off the kernels and adding them to a large bowl.

  • 2. Prep the rest of your ingredients. Drain and rinse the black beans, dice the mangos and bell pepper and finely chop the onion and cilantro.

  • 3. Mix. Add the prepped ingredients to the bowl with your corn and pour your lime juice over the top. Add the chili powder and salt and black pepper to taste then toss until the salad looks fully coated. (I’m pretty generous with the amount of salt I use.) Taste and adjust your seasonings, if needed.

  • 4. Chill & serve! Cover the salad and let it chill in the refrigerator for 30 minutes – 1 hour. Right before serving, add the avocado and serve immediately. (We’ll usually serve it with lime wedges in case anyone wants a little extra lime too.)
