Happy 18th birthday to my daughter! I started Lunchbox Dad when she started Kindergarten and here we are still going 13 years later!
She turned 18 last week so I had to make her a birthday lunch with a little throwback cupcake sandwich to the first birthday lunch I ever made her.
I wanted to share how I did it so that you can make your kids one for their next birthday. So be sure to save this for later and share it with a friend who might like the idea!
Directions:
Use a cake-shaped cookie cutter or cupcake liner to cut shapes out of one or two slices of bread.
Spread cream cheese or strawberry cream cheese on the bread to mimic frosting.
Place a cherry on top for the “cherry on the cake.”
Fill one side compartment with yogurt-covered raisins and a birthday-themed granola bar.
Fill another side compartment with birthday-themed little cake bites and fresh blueberries.
