Happy 18th birthday to my daughter! I started Lunchbox Dad when she started Kindergarten and here we are still going 13 years later!

She turned 18 last week so I had to make her a birthday lunch with a little throwback cupcake sandwich to the first birthday lunch I ever made her.

I wanted to share how I did it so that you can make your kids one for their next birthday. So be sure to save this for later and share it with a friend who might like the idea!

Directions:

  • Use a cake-shaped cookie cutter or cupcake liner to cut shapes out of one or two slices of bread.

  • Spread cream cheese or strawberry cream cheese on the bread to mimic frosting.

  • Place a cherry on top for the “cherry on the cake.”

  • Fill one side compartment with yogurt-covered raisins and a birthday-themed granola bar.

  • Fill another side compartment with birthday-themed little cake bites and fresh blueberries.
